Tex-Mex something or other

Recipe: Tex-Mex Tasty

Ingredients:
1 1/2 cup cooked rice
1/4 lb hamburger
2 tbsp Trader Joe's Santa Fe sauce
1 tbsp hot sauce (Cholula preferred)
1/2 onion, diced
1/2 tomato, diced
3 tbsp black bean dip
blue corn tortilla chips

Directions:
- Brown hamburger in medium fry pan, add Santa Fe sauce and hot sauce. Cook down.
- Add onion and fry until onions are cooked.
- Add tomato and black bean dip. Cook on medium heat until tomatoes are cooked slightly.
- Serve over rice, top with coarsely crushed tortilla chips.

Yeah... so this doesn't really have a name. I was going to call it "Tex-Mex Surprise" but that probably wouldn't have gone over so well... Still, really good. I like it spicy, so there's a bit of hot sauce in there, but I suppose you can reduce the spice if you wish. Not that I would ever call you a wussy if you did so. No, not ever...

By the way, the exact same thing would be good with substituting canned black beans for black bean dip. I just didn't happen to have black beans tonight. Or you can replace the meat with more beans. Or you can put in a different sauce - use chili powder and whatever else you want. It's all good.

Can you cook anything without some type of prepared ingredient? Get some fresh hot peppers - sauté them in oil - the fire will pour out of your head. Sauté onions, peppers, add chopped tomatoes, reduce with chicken broth or white wine, add the hot peppers (puree if you can), adjust to taste. Fix it the way you like it – hot, sweet (get Vidalia onions, a bit of sugar and sauté to caramelize), whatever. It’ll freeze nicely.

Fortunately, thanks to Trader Joe's, the "prepared ingredients" I use are not too removed from home-prepared ingredients. I haven't found a single thing yet sold at Trader Joe's which isn't all-natural, no artificial colors or flavors, no preservatives.

Check the ingredients of the Santa Fe sauce I listed above:
Diced tomatoes, water, green chilies, chopped onion, chili powder, dehydrated onions, salt, cumin, apple cider vinegar, oregano, garlic, citric acid, spices.

So the only things you could turn your nose up at this are dehydrated onions and citric acid. That's not bad. Personally, though, I doubt you could give me a recipe for homemade sauce which was just as good but was as time- and cost-effective as paying $2.29 for this bottle.

Avoiding the chemicals is very good - and I would admit there are many well made, commercially available sauces that won't kill you (most Ketchup falls in that category). My point was less about the health consequences than understanding how flavors work together. Why is there vinegar in the sauce? Any idea what kind of spices are used to get the flavor? How do you get the consistency of the sauce right?
